Last week, Carleton Dining partnered with Parkdale

Last week, Carleton Dining partnered with Parkdale Food Centre and Chef Chris Commandant on an Indigenous recipe workshop and meal preparation event!

Mohawk chef, Chris Commandant, originally from the Wahta Haudenosaunee community, is a Sous Chef at the National Arts Centre and Indigenous Food Knowledge Keeper. Chris led Parkdale Food Centre’s weekly virtual cooking class, where he guided participants through a demonstration of a traditional Fall Harvest Stew recipe while also facilitating a discussion about Indigenous food sovereignty and food insecurity. For many Indigenous communities, access to culturally appropriate ingredients can be very difficult, due to a combination of factors including prohibitive costs and unsustainable resource management post-colonization. He explained that the celebration and honouring of Indigenous cuisine can help Indigenous youth connect to their culture, empowering them to carry on this knowledge from Elders and community members.

After the virtual cooking workshop, Carleton Dining team members prepared 350+ servings of the Fall Harvest Stew, which included locally sourced bison and elk. The meals were prepared for organizations serving Indigenous community members, including Assembly of Seven Generations and Minwaashin Lodge. The event served as an opportunity for Carleton Dining employees to develop a deeper understanding of Indigenous cuisine while also supporting the provision of culturally appropriate food for Indigenous community members.

A huge thank you to Chef Chris for sharing his time and knowledge with our team! And thank you Parkdale Food Centre for welcoming us into your space and sharing your community ❤️

Today at The Mix we served a sweet spread of Fairtrade treats using ingredients from @caminoamigos 🍫 and @equifruit 🍌 The Fairtrade Certification creates lasting economic, social, and environmental impact 🌍 for producers in the Global South and is helping create more equitable trade policy.
